Ingredients

2 C. chopped broccoli

salt and ground black pepper to taste

1 3/4 C. vegetable broth

1 C. quinoa

1 C. shredded Cheddar cheese

Directions

1. Boil the following in a large pot: quinoa, veggie broth, and broccoli.

2. Once the broth is boiling set the heat to low and place a lid on the pot.

3. Let the contents cook for 17 mins.

4. Add in your cheese and put the lid back on.

5. Let everything cook for 4 more mins then add pepper and salt.

6. Enjoy.
